This Chickpea–Spinach Curry, rich in protein from chickpeas and packed with the goodness of spinach, is the perfect wholesome dish for the season. Ingredients Needed for Chickpea–Spinach Curry
Main Ingredients:

Chickpeas (dry) – 1 cup

Water for soaking – 3 cups

Ghee/Oil – 1 tablespoon

Garlic (crushed) – 5 cloves

Ginger (grated) – 1 inch

Onion (chopped) – 1.5 cups

Tomato (chopped) – 3/4 cup
-
Water for cooking – 1.5 cups

Baby spinach (chopped) – 3 cups
Chickpea Recipe: Spices:

Kashmiri red chilli powder – 1 teaspoon

Coriander powder – 2 teaspoons
-
Cumin powder – 1/2 teaspoon
-
Garam masala – 1/2 teaspoon

Salt – 1 teaspoon
-
Amchur (dry mango powder) – 1 teaspoon (or lemon juice)
Optional Whole Spices:

Cumin seeds – 1 teaspoon
-
Bay leaves – 2
-
Cinnamon – 1 small piece
How to Make Chickpea–Spinach Curry
Step 1:
Heat oil in a pressure cooker over medium heat. Add the optional whole spices, followed by ginger, garlic, and onions. Sauté for about 3 minutes until fragrant.
Step 2:
Add tomatoes and all the ground spices (except amchur). Discard the soaking water from the chickpeas, then add the chickpeas along with fresh cooking water. Mix well.
Step 3:
Pressure-cook for 6–7 whistles or until the chickpeas soften and can be easily pressed between fingers. Allow the pressure to release naturally.
Step 4:
If you prefer a thicker gravy, lightly mash some of the chickpeas using a masher or the back of a ladle.
Step 5:
Add spinach and amchur. Cook for 2–3 minutes, adding a little water if needed.
