  • Eggplants (medium-sized) – 4–5

  • Yogurt – 1 cup (whisked)

  • Grated coconut – 3 tbsp

  • Green chilies – 2 (finely chopped)

  • Ginger-garlic paste – 1 tsp

  • Oil – 3 tbsp

  • Mustard seeds – 1 tsp

  • Turmeric powder – ½ tsp

  • Red chili powder – ½ tsp

  • Coriander powder – 1 tsp

  • Garam masala – ½ tsp

  • Salt – to taste

  • Fresh coriander leaves – for garnish


Dahi Baingan Recipe:Method to Prepare Dahi Baingan:

  1. Wash the eggplants and cut them into pieces. Sprinkle some salt and set aside for 10 minutes.

  2. Heat oil in a pan and add mustard seeds. Let them splutter. Then add ginger-garlic paste and chopped green chilies.

  3. Add the eggplant pieces and sauté until they turn golden brown.

  4. In a bowl, mix whisked yogurt, grated coconut, turmeric, red chili powder, coriander powder, and salt to make a smooth paste.

  5. Add the sautéed eggplants to the yogurt-coconut mixture and gently mix.

  6. Cover and cook on low heat for 5–10 minutes. Sprinkle garam masala on top and turn off the heat.

  7. Serve hot with rice or roti, garnished with fresh coriander leaves.
