Ingredients for Dal Dhokli:
For the Dal:

Arhar dal (pigeon peas) – ½ cup

Water – 2.5 cups

Peanuts – 2 tbsp

Tamarind pulp – 1 tbsp (or lemon juice)

Jaggery – 1 tbsp

Tomato – 1 (finely chopped)

Turmeric powder – ¼ tsp

Red chili powder – ½ tsp

Salt – to taste
Dal Dhokli Recipe:
For the Dhokli (Wheat Dough):

Whole wheat flour – 1 cup
-
Turmeric – ¼ tsp
-
Red chili powder – ½ tsp
-
Carom seeds (ajwain) – ½ tsp

Salt – to taste

Oil – 1 tbsp
-
Water – as needed to knead dough
For Tempering:

Ghee or oil – 1 tbsp

Mustard seeds – ½ tsp

Cumin seeds – ½ tsp

Asafoetida (hing) – a pinch

Curry leaves – 6–7

Green chili – 1–2 (chopped)
Dal Dhokli Recipe: Method to Prepare Dal Dhokli:

Wash the dal and cook it in a pressure cooker with turmeric and 1.5 cups water for 4 whistles.

Once cooled, mash the dal thoroughly until smooth.

In a bowl, combine whole wheat flour with turmeric, red chili powder, ajwain, salt, and oil. Mix well.

Knead into a soft dough and cover it for 10 minutes.

Roll out the dough into thin flatbreads and cut them into square pieces.

Heat ghee in a pan and add mustard seeds, cumin, hing, curry leaves, and chopped green chili for tempering.

Add the chopped tomato and sauté slightly. Then mix in the cooked dal, peanuts, tamarind pulp, and jaggery.

Add water as needed and bring the dal to a boil.

Add the dhokli pieces to the boiling dal and cook on low heat for 10–12 minutes.

Garnish with fresh coriander, squeeze in some lemon juice, add a little ghee, and serve hot.
