Method:

  1. In a deep bowl, mix semolina and rice flour. Gradually add a little water to form a smooth mixture.

  2. Add asafoetida, cumin seeds, and salt. Mix well and cover the bowl. Keep it in a warm place for 2–3 hours to ferment slightly.

  3. Meanwhile, finely chop onions, green chilies, ginger, and cashews.

  4. After the resting period, take the batter and mix in all chopped ingredients except onions. Gradually add water to make a thin, pourable batter.

  5. Heat a non-stick pan or tawa on medium heat. Once hot, add a little oil and spread it evenly.

  6. Pour a ladle of batter in the center of the pan and spread it in a circular motion to form the dosa.

  7. Sprinkle finely chopped onions and green chilies on top. Press lightly with a spoon and cook for 2–3 minutes.

  8. Drizzle a little oil around the edges and sauté. Flip the dosa and cook until golden brown.

  9. Fold and serve hot. Repeat the process for the remaining batter.
