Upittu Recipe: Upittu is a light, wholesome, and quick-to-make dish that makes an excellent breakfast or light meal option. 1 cup semolina (rava)

1 medium onion (finely chopped)

1–2 green chilies (chopped)

1 small piece of ginger (grated)

½ cup mixed vegetables (carrot, peas, beans)

8–10 curry leaves

½ teaspoon mustard seeds

1 teaspoon chana dal

1 teaspoon urad dal

2 tablespoons oil or ghee

Salt to taste

Fresh coriander leaves and lemon juice for garnish
Upittu Recipe: How to Make Upittu
1. Roast the Semolina
Heat a pan and dry roast the semolina on low flame until it turns light golden and aromatic. Remove it to a plate and keep aside.
2. Prepare the Tempering
In the same pan, heat oil or ghee. Add mustard seeds and let them splutter. Then add chana dal and urad dal, roasting until light golden. Add curry leaves, chopped green chilies, and grated ginger.
3. Add Vegetables
Add the chopped onion and sauté until slightly pink. Then add the mixed vegetables and cook for 2–3 minutes.
4. Add Water
Pour in 2 cups of water and add salt to taste. Let the water come to a boil.
5. Mix the Semolina
Once the water starts boiling, slowly add the roasted semolina while stirring continuously to prevent lumps.
6. Cook
Cover and cook on low flame for 2–3 minutes until the water is absorbed and the upittu becomes soft and fluffy. Turn off the heat.
Serving Suggestion
Garnish with fresh coriander leaves and a squeeze of lemon juice. Serve hot with coconut chutney or sambar for a complete and satisfying meal.
