Kaju Pakoda: Delicious Cashew Fritters – Easy Recipe

Ingredients:

  • Cashews – 1 cup

  • Gram flour (Besan) – 1/2 cup

  • Rice flour – 1/2 cup

  • Ginger-garlic paste – 1/2 tsp

  • Mint leaves – 1/2 cup (finely chopped)

  • Coriander leaves – 1/2 cup (finely chopped)

  • Coarsely crushed fennel seeds – 1 tsp

  • Red chili powder – as per taste

  • Salt – as per taste

  • Oil – for deep frying


Method:

  1. Prepare the batter:

    • In a bowl, mix besan, rice flour, ginger-garlic paste, salt, chili powder, and fennel seeds.

    • Add 1 tsp of oil from the pan into the mixture and mix well.

  2. Heat the oil:

    • Heat the remaining oil in a deep frying pan over medium heat.

  3. Add herbs and cashews:

    • Mix chopped mint, coriander leaves, and cashews into the batter.

  4. Adjust consistency:

    • Gradually add a little water to form a thick, sticky batter.

    • Make sure the batter is not too runny.

  5. Fry the pakodas:

    • Drop small portions of the batter into the hot oil.

    • Fry until golden and crisp.

  6. Serve:

    • Serve hot with tea or chutney.
