Gajar Matar Pulao: Flavorful Carrot & Peas Pilaf for Winter Dinners

Looking for a warm and comforting dinner this winter? Try making Gajar Matar Pulao – a simple yet flavorful rice dish with carrots and peas. Serve it alongside dal tadka or a paneer curry for a wholesome meal. Here’s an easy recipe:


Ingredients:

  • Basmati rice – 1 cup

  • Carrot – 1 (cut into small cubes)

  • Green peas – 1/2 cup

  • Onion – 1 (finely chopped)

  • Cloves – 2

  • Ginger-garlic paste – 1 tsp

  • Ghee or oil – 2-3 tbsp

  • Water – 2 cups

  • Salt – as per taste

  • Turmeric powder – 1/2 tsp

  • Cumin seeds – 1/2 tsp

  • Garam masala – 1/2 tsp

  • Bay leaf – 1

  • Cinnamon stick – 1 small piece

  • Coriander leaves – 2 tbsp (finely chopped)


Method:

  1. Prep the rice and veggies:

    • Wash the rice thoroughly and soak it in water for 20-30 minutes.

    • Wash, peel, and cut the carrot into small cubes. Wash the peas and keep them aside.

  2. Cook the spices and vegetables:

    • Heat ghee or oil in a pan. Add cumin seeds, bay leaf, cloves, and cinnamon. Sauté for a few seconds.

    • Add finely chopped onion and ginger-garlic paste. Fry until golden.

    • Add carrots and peas, then sprinkle turmeric, garam masala, and salt. Cook for a few minutes until veggies are slightly tender.

  3. Cook the rice:

    • Drain the soaked rice and add it to the pan. Gently mix with the vegetables.

    • Pour in 2 cups of water, cover, and cook on low heat until the rice is soft and water is absorbed.

  4. Finish and garnish:

    • Once done, turn off the heat and let the pulao rest for 5 minutes with the lid on.

    • Garnish with freshly chopped coriander leaves before serving.


Tip: For extra flavor, you can roast the rice lightly before adding water. Serve hot with raita, dal, or paneer curry for a complete meal.
